So the next morning, my leaven is looking and floating like it should.
So far so good, but by the look of the recipe, I've got a long day ahead of me!
Dissolved some salt in water, and mixed the rest of the water and quite a lot of flour in with the leaven.
Hmmm. Gonna need a bigger bowl...
Now I've got to leave it to "rest" for a few hours - that will be "until the girls come home from school.
Meanwhile, I'm not sure what to do with my enormous bowl of starter that's still sitting there stinking. According to the instructions, I need to keep feeding it 100g of water and flour each day, but from now I have to "discard or use" half of it. 100g a day? Discard?? I know it's biodegradable and all, but that doesn't sound very 'zero waste' to me... I might have to try plan B, which is to put it in the fridge, where it supposedly hybernates, and then bring it out and feed it three days before the next batch of bread - that would be in four days, if we want weekly bread.
Hmm... well, I guess I'll see how the bread turns out, and then decide if this is worth basically having an extra mouth to feed in the household...
