Sure to rise

This dough sure needs to rest a lot, even though it's me doing all the work!

So I folded it every half an hour, then split it into two 'rounds'.


 After some more resting, I had to line two bowls with a tea-towel and generous sprinklings of flour.
Finally, a further set of folding and turning, and then each blob of dough was gently lowered into a bowel (so as not to wake the resting yeast, I guess).
Now it's almost night time, and as we want bread for lunch tomorrow, instead of leaving it to rise "for four hours", they're going in the fridge with a loose plastic covering for the night.

I'm not sure what the plastic is about, and I'm a bit displeased that I got this far through my "eliminate the plastic yeast packet" mission only to discover I need more plastic.  But anyway, I used the plastic sheets my conscientious wife saves after cheese and pasta sellers can't Just Say No to them, so at least it's re-use of plastic, right?

So by tomorrow morning, they should be ready for Complicated Baking.
